COCONUT BERRY SMOOTHIE

Coconut Berry Smoothie

The weather may be a little on the chilly side here in south Oz, but smoothies are still my go-to when I’m looking for a snack, light meal or kiss on the lips from the smoothie god to remind me just how delicious summer-time can be. This one is vegan, GF, low on fat and big on flavour!

Ready to smooch up to the smoothie god? (she’s such a flirty little minx)

Here we go…

Coconut Berry Smoothie

INGREDIENTS
  • 1 cup strawberries* (cut those pesky green bits off the top)
  • 1 cup blackberries*
  • 1 cup blueberries*
  • 2 cups frozen banana chunks (approx 2 very ripe bananas)
  • 2 cups coconut milk (low fat is fine)
  • 1 tablespoon chia seeds

* mixed frozen berries is fine if you can’t find fresh

INSTRUCTIONS
  1. Pop all the ingredients into your blender and blend until smooth.
  2. Pour into glasses, jars or a smoothie bowl and serve*

*Smoothie will keep in the refrigerator overnight.
