Paleo Lemon Chia Muffins with Runny Vegan Coconut Frosting

When I decided to Ditch the Diet, chia was my (not so dirty) little secret!

These tiny little seeds swell up when you add liquid so they keep you feeling full for hours (buh-bye food obsession) they help balance blood sugar (buh-bye sugar cravings) are full of healthy fats and age-defying antioxidants (buh-bye Botox)

So next time you’ve got a hankering for something uber delish and you don’t want to bust out that block of Cadbury’s you’ve been wishing someone would just hurry up and eat, whip up a batch of these little beauties!

A slimming little muffin that won’t leave you with a “muffin top”! 😉

Paleo Lemon Chia Muffins with Runny Vegan Coconut Frosting

MUFFIN INGREDIENTS
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 2 tablespoons coconut flour
  • 1/4 cup coconut oil, melted
  • 3 tablespoons organic honey or brown rice syrup
  • 3 eggs
  • 2 teaspoons lemon zest
  • 2 tablespoons coconut or greek yoghurt
  • 2 tablespoons lemon juice
  • 2 tablespoon almond or coconut milk
  • 1 tablespoon chia seeds
  • Pinch of rock salt
ICING INGREDIENTS
  • 6 tablespoons melted coconut oil
  • 3 tablespoons honey or brown rice malt syrup
  • 2 tablespoons coconut flour
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup almond or coconut milk, at room temperature
INSTRUCTIONS

Preheat oven to 190 degrees Celsius.

In a large bowl, mix all wet ingredients. Once combined, add dry ingredients but don’t over mix or batter will become “rubbery”. If the chia seeds soak up too much moisture, just a another tablespoon of almond or coconut milk to create a smooth consistency.

Spoon mix into muffin tins and bake for approximately 15 minutes or until a toothpick comes out clean from the centre of the muffin. Allow muffins to cool for 3 to 5 minutes in the muffin tray before turning them onto a wire rack, drizzle with icing and serve.

For Icing: Add all ingredients to your blender and blend until smooth, creamy but still runny (feel free to taste-test and make adjustments. That’s the funnest part!)
