Breaking up with emotional eating can sometimes lack a little, dare I say it…sweetness
But saying adios muchachos to emotional eating does NOT have to a snooze-fest for your taste buds.
In fact, indulging in the occasional treat (without all the nasties) is essential to maintaining a healthy relationship with food and really, who doesn’t like a little Afternoon Delight? (Oops! Did I say AFTERNOON? I meant APRICOT. Yup… that’s definitely what I meant)
Here’s what you need
- 1 cup organic coconut oil
- 1 cup organic coconut sweet spread
- 1 cup sesame seeds
- 1 cup raw (or roasted) almonds
- 1 cup dried chopped apricots
- 2 cups shredded coconut
- 1/4 cup cacao nibs
- 1/2 cup gluten free oats
- 1/2 cup organic honey
Here’s how it’s done
Mix all ingredients (you may need to heat the coconut oil and coconut spread to make them runny) and press into glass dish lined with baking paper. Allow it to set in the freezer for 15 minutes before devouring!
This recipe is very flexible. Add more nuts or less honey. Try it with cranberries or sultanas. Add more oats or coconut to suit your taste, the combinations are endless!
