Chewy Cranberry & Oat Cookies

Just because you have a “thing” with emotional eating does NOT mean you have a “thing” with food. What it means is that you have a crafty game of Hide and Seek going on with your feelings.
No biggie. Food is not the enemy here.
And so, in the sprit of all things peace-loving and cookie-hugging, I’m always up for a simple, healthy recipe I can incorporate into my regular rotation and this, my Hide and Seek partner in crime, ticks all the boxes.
These delicious little nuggets are low in fat, vegan friendly and, just FYI… go roooolly well topped with Chia Jam, coconut yoghurt or slurped with a Coconut Berry Smoothie! (Shhh… that can be our little secret!)
Chewy Cranberry & Oat Cookies
INGREDIENTS
- 2 ripe bananas, mashed
- 2 cups instant oats
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- ½ cup dried cranberries
- ½ cup unsweetened applesauce
- ¼ cup desiccated coconut
- ¼ cup honey
INSTRUCTIONS
- Mash bananas in a bowl, then add applesauce, vanilla, cinnamon and honey. Stir to combine.
- Add the oats, coconut and cranberries, allowing the mixture to sit for 5 minutes if necessary to allow the oats to absorb the liquid ingredients.
- Drop spoonfuls of mixture onto a lightly greased oven tray and bake for 20 minutes at 180 degrees Celsius, or until golden brown.
