Chia Chai Latte Pudding



As we get ready to head into the warmer months here in the land down under, I can’t help but stop, and think, and wonder…

  1. Will I ever tire of chia pudding and
  2. Will I ever stop creating cheesy rhymes?

Under the assumption that the answer to both is a resounding NO, check out this week’s delicious recipe. It’s chai latte lovin’ good!


Chia Chai Latte Pudding

  • ¼ cup chia seeds
  • ¼ cup chai tea (you can use regular black tea if you prefer)
  • ¾ cup nut milk (I like almond or coconut milk)
  • ½ tsp vanilla extract
  • 1½ tsp spice blend (see below)
  • 2 tbsp brown rice malt syrup or maple syrup


  • 1 tsp cinnamon, ground
  • ¼ tsp all spice
  • ¼ tsp ginger
  • ⅛ tsp nutmeg
  • ⅛ tsp cloves


  1. Soak the tea bag in ¼ cup of hot water for 5-10 minutes.
  2. In a small bowl, gently combine chia seeds, nut milk, vanilla, rice malt syrup, tea and half the spice blend.
  3. Allow to cool, cover and place in the fridge for 1-2 hours or overnight.
  4. Serve with berries or fresh fruit, top with coconut yogurt and and sprinkle with remaining spice blend.
