Chia Chai Latte Pudding

As we get ready to head into the warmer months here in the land down under, I can’t help but stop, and think, and wonder…
- Will I ever tire of chia pudding and
- Will I ever stop creating cheesy rhymes?
Under the assumption that the answer to both is a resounding NO, check out this week’s delicious recipe. It’s chai latte lovin’ good!
Chia Chai Latte Pudding
INGREDIENTS
- ¼ cup chia seeds
- ¼ cup chai tea (you can use regular black tea if you prefer)
- ¾ cup nut milk (I like almond or coconut milk)
- ½ tsp vanilla extract
- 1½ tsp spice blend (see below)
- 2 tbsp brown rice malt syrup or maple syrup
SPICE BLEND
- 1 tsp cinnamon, ground
- ¼ tsp all spice
- ¼ tsp ginger
- ⅛ tsp nutmeg
- ⅛ tsp cloves
INSTRUCTIONS
- Soak the tea bag in ¼ cup of hot water for 5-10 minutes.
- In a small bowl, gently combine chia seeds, nut milk, vanilla, rice malt syrup, tea and half the spice blend.
- Allow to cool, cover and place in the fridge for 1-2 hours or overnight.
- Serve with berries or fresh fruit, top with coconut yogurt and and sprinkle with remaining spice blend.
