Coconut Berry Smoothie

The weather may be a little on the chilly side here in south Oz, but smoothies are still my go-to when I’m looking for a snack, light meal or kiss on the lips from the smoothie god to remind me just how delicious summer-time can be. This one is vegan, GF, low on fat and big on flavour!

Here we go…
Coconut Berry Smoothie
INGREDIENTS
- 1 cup strawberries* (cut those pesky green bits off the top)
- 1 cup blackberries*
- 1 cup blueberries*
- 2 cups frozen banana chunks (approx 2 very ripe bananas)
- 2 cups coconut milk (low fat is fine)
- 1 tablespoon chia seeds
* mixed frozen berries is fine if you can’t find fresh
INSTRUCTIONS
- Pop all the ingredients into your blender and blend until smooth.
- Pour into glasses, jars or a smoothie bowl and serve*
*Smoothie will keep in the refrigerator overnight.
