
Healthy Breakfast Chia Pudding
One of the most common questions I get asked is “what do I eat in a typical day?”
Honestly? The answer is whatever the heck I want. Most of the time it’s fresh fruit and veggies, but like most people I go through phases where I get stuck on one food (like chocolate) for a long period of time (like 40 years) but the one dish I luuuurve for breakfast (besides chocolate) is Chia Pudding.
I’ve been eating Chia Pudding every.single.day for my breakfast for several years now and I still love it.
It’s filling, it’s nutritious, it’s high in fibre, protein and omega-3s which is perfect for me as my diet it predominantly plant-based.
So in the spirit of all things glorious, here is my fantabulous (and ridiculously simple) recipe for Breakfast Chia Pudding.
Here’s how it’s done:
1/4 cup chia seeds
1 cup coconut, nut or dairy milk
1/2 tablespoon organic honey or add stevia to taste
Mix chia seeds, coconut milk and sweetener together in a small container, bowl or glass mason jar and allow to soak in the fridge overnight.
In the morning, layer with fresh fruit, coconut yoghurt, gluten free muesli or oats, toasted nuts, shredded coconut and ENJOY!
