Paleo Lemon Chia Muffins with Runny Vegan Coconut Frosting
MUFFIN INGREDIENTS
- 1 cup almond flour
- 1 teaspoon baking powder
- 2 tablespoons coconut flour
- 1/4 cup coconut oil, melted
- 3 tablespoons organic honey or brown rice syrup
- 3 eggs
- 2 teaspoons lemon zest
- 2 tablespoons coconut or greek yoghurt
- 2 tablespoons lemon juice
- 2 tablespoon almond or coconut milk
- 1 tablespoon chia seeds
- Pinch of rock salt
ICING INGREDIENTS
- 6 tablespoons melted coconut oil
- 3 tablespoons honey or brown rice malt syrup
- 2 tablespoons coconut flour
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup almond or coconut milk, at room temperature
INSTRUCTIONS
Preheat oven to 190 degrees Celsius.
In a large bowl, mix all wet ingredients. Once combined, add dry ingredients but don’t over mix or batter will become “rubbery”. If the chia seeds soak up too much moisture, just a another tablespoon of almond or coconut milk to create a smooth consistency.
Spoon mix into muffin tins and bake for approximately 15 minutes or until a toothpick comes out clean from the centre of the muffin. Allow muffins to cool for 3 to 5 minutes in the muffin tray before turning them onto a wire rack, drizzle with icing and serve.
For Icing:Â Add all ingredients to your blender and blend until smooth, creamy but still runny (feel free to taste-test and make adjustments. That’s the funnest part!)
