Raw Cherry Ripe Brownies

This little gem is gluten free and crazy pants delish! Next time the Binge Monster sneaks up on you from behind and scares the what-nots out of you, tell him to go attach himself to someone else’s booty. Your new secret weapon for beating the binge has arrived!
Raw Cherry Ripe Brownies
INGREDIENTS
- 1 cup almond meal
- 1 cup chopped walnuts
- 2 cups medjool dates, pitted
- ¼ cup organic coconut oil, melted
- ¼ cup organic shredded coconut
- ½ cup cacao powder
- ½ cup fresh cherries, de-pitted and halved (you can use preserved cherries other fruit if desired)
- ¼ cup raw cacao nibs
- 1 tsp vanilla
- Tiny pinch of salt (optional)
INSTRUCTIONS
- Place your dates, walnuts, almond meal, cacao powder, shredded coconut, coconut oil, cherries and vanilla in the food processor and combine; add extra coconut oil if the mix is too dry.
- Next, stir in the cacao nibs and press the mix into a glass tray.
- Sprinkle with extra coconut (or icing sugar if you run out of coconut hahaa!) and dried cranberries and allow to set for 2 hours.
- Will store in an airtight container in the fridge for up to 1 week.
